Parsley Pesto

Parsley PestoHomemade pesto is super easy to make and tastes wonderful! I have substituted parsley for coriander (or traditional basil) in the past, which I also love!

Ingredients:

  • 1 bunch parsley (I used 20ish grams)
  • 35g pine nuts
  • 50g parmesan
  • 2 garlic cloves
  • 110g olive oil

Method:

1. Over a medium heat, toast the pine nuts until slightly brown. Be careful because they go from golden to burnt pretty quickly!

Toasting pine nuts2. Roughly chop the parsley, stalks and all. Peel and roughly chop the garlic gloves and add them to a bowl with the cheese and pine nuts.

Pesto mixture3. Add in the olive oil and blend until the desired consistency. (I only have a hand blender at the moment so I used that, however it would be much easier and quickly in a food processor!)
