Asian Inspired Coleslaw

(For the coleslaw)

  • 200g red cabbage
  • 200g white cabbage
  • 5-6 baby carrots
  • 1 apple
  • large handful coriander

(For the dressing)

  • 3 tbsp white wine vinegar
  • 6 tbsp olive oil
  • 1/2 tsp salt
  • 1 tsp fresh ginger
  • 1 chili (or to taste)
  • juice of 1 lime

1. First, thinly shred both the red and white cabbage.

2. Then, cut both the carrots and apple into thin matchsticks. Roughly chop the coriander and add these ingredients to the cabbage, mixing them all up well.

carrot matchsticks apple matchsticks3. Now to create the dressing. Measure the white wine vinegar, olive oil and lime juice into a small jug. Finely chop the ginger and chili then add to the jug along with the salt and a twist of pepper. Mix the dressing well and adjust to your own taste if necessary, adding more oil, lime, seasoning etc!


4. Pour the dressing over the coleslaw and mix well before eating.
