These days all my family thinks about is fish. Well, salmon and haddock and various other items that can be smoked. Now that we’ve hit high summer they are busier than ever and seem to spend all of their time discussing what should be smoked when or how much salt a particular thing needs on it. It does result, eeeeeeeever so slightly, in a bit of a fish overload so sometimes, on very rare occasions, we venture away from our regular smoked salmon aperos in search of another treat. Last night was such a night where we fancied a bit of a change. So we decided to make some Cheesy Fish Crackers. Well, you didn’t expect us to move away from the fish theme completely, did you?! Really these tasty little nibbles could be made into any shape that you want. It just so happened that my mum had a handy little fish cutter just waiting to be used.
They were delicious… a yummy mixture of crunchy cheesiness with a slight heat coming from the cayenne pepper at the end. Another bonus, in my opinion, is that there is very few ingredients in this recipe which makes it very quick and easy to prepare. Perfect for a quick apero before dinner! The cayenne pepper is optional – as is how much of it you use, depending on how spicy you like your food! They were a big hit with the family, as you can see from the first picture… I could barely take a photo of the finished result before my Dad was pinching one!
